In our on-going efforts to keep our meat products as close to local as possible and the best quality possible, we have recently made the move to supply the exceptionally tasty, succulent pork from Waratah Farms in Otorohanga.
The Duroc breed of pig from Waratah Farms is a fine looking animal with drooping ears, and a colouring that can range from a very light golden, almost yellow colour, to a very dark red colour.
In scientific terms, Waratah Duroc is a rich flavored pork, with superior tenderness and natural juiciness. Why?
The answer lies in the fine breed. The Duroc breed produces pork that is bright reddish pink in color, containing a higher percentage of intramuscular fat (marbling) and a higher pH. This is where the Taste, Tenderness and Succulence that Waratah Duroc is so renowned for comes from. In many ways Waratah Duroc is the ‘Hereford Prime’ of pork.
For the more discerning customer who is becoming educated via Masterchef and the numerous shows that fill the food channel there is a real understanding that darker reddish raw pork will typically be juicier, more tender, and have a higher pH than lighter colored raw pork.
These characteristics are essential for superior eating quality.
